Nordic Kitchen ("Nordisk Køkken") was defined at a November 2004 symposium and embodies for the quality and the pureness of ingredients. The ingredients being only Nordic produce.

Of course - seeing that we do not have the pure produce from the Nordic countries here in Brazil we can't make the true Nordic Kitchen - but that shall not stop emporiUM escandinavia from taking the traditions and preparation from the Nordic Kitchen manifest and symposium and implement that in its true from - using alas produce that is still pure and of the highest quality from Brazil and its neighbours.

"Nordisk Køkken Version 2" is emporiUM escandinavia's continuation, still using the basics that were established at the Nordic Kitchen symposium. Version 2 in this case is our overlay; where we have taken the Nordic dishes and recipes to another level in preparation and presentation.

The motivation for us was and is to take the beloved classical Nordic food into the 21st century and give it a little twist - be that in the recipe, in the presentation or both - while preserving the "mmmmmmm" effect of the original.

The Nordic Kitchen is rumoured to become the next big thing to hit the international food scene - expect to hear more of it - and in Brazil first and foremost from emporiUM escandinavia.
